Greek Gods:
Zeus- God of the sky, ruler of Mount Olympus and King of the Gods. Symbols include the thunderbolt, eagle, oak tree scepter and scales.
Poseidon- God of the sea/water and also earthquakes. Symbols include horse, bull, dolphin and trident.
Dionysus- God of wine and celebrations. Symbols include ivy, grapevine, cup, tiger, panther, leopard and goat.
Apollo- God of the sun, light, knowledge, healing, the arts, music, poetry, prophecies, oracles and archery. Symbols include the sun, lyre, bow and arrow, raven wolf, swan and mouse.
Hermes- Messenger of the gods. God of thieves and games. Symbold include the caduceus (a staff wntwined with two snakes), winged sandals, stork and tortoise.
Ares- God of war, violence and bloodshed. Symbols include the boar, serpent, dog, vulture, spear and shield.
Hephaestus- Master blacksmith and craftsmen of the Gods. God of fire and the forge. Symbols include fire, anvil, axe, donkey and hammer.
Greek Godesses:
Hera- Goddess of marriage and family and Queen of the Gods. Symbols include the peacock, crown, cuckoo, lion and cow.
Demeter- Goddess of agriculture, nature and the seasons. Symbols include the poppy, wheat, torch and pig.
Artemis- Goddess of the hunt, virginity, childbirth, archery, the Moon and all animals. Twin sister of Apollo. Symbols include the Moon, hound, she-bear, cypress tree.
Athena- Goddess of wisdom, defense and strategic warfare. Symbols include the owl and olive tree.
Aphrodite- Goddess of love and beauty. Symbols include the dove, bird, apple, bee and rose.
These are the main 12 Olympian Gods. There are lots of other Gods (some of which are sometimes included in the 12 main ones, like Hades, Pan and Hestia (who was once a major Goddess but traded her place with Dyonysus, making 7 major Gods and 5 major Goddesses and causing the council to be uneven)). There are many minor Gods and Goddesses too, like Iris, Nike and Nemesis.
There are also the Protogenoi. They are "the first born of the immortals, who formed the very fabric of the Universe". "Protos" meaning first and "genos" meaning born in Greek. Some Protogenoi included Kronos, Chaos, Uranus and Gaia.
Also in Greek Mythology you have the Titans. There are 12 main Titans including Hyperion, Phoebe, Kronos and Rhea. Less important Titans include Atlas, Helios, Leto, Prometheus and Epimetheus.
